The Team from Manuka & Shirley's

Billy is a seasoned chef with experience beginning in our state's Southwest where he completed his apprenticeship at Clairault and The Cape Wine Bar before moving into a position with the Margaret River Hospitality Group working under the guidance of exec chef, Tony Howell. Billy got his first head chef role at Morris's in Margaret River before moving to England, where he worked at the acclaimed three-rosette restaurant, Grafene. Upon returning to WA he fell in love with Fremantle and the laid back vibe where he could continue his hobbies including fishing, surfing & playing music. Before settling in as Manuka's head chef in he gained 4 years of invaluable experience leading the team at Sweetwater Rooftop Bar. Billy has a passion for both molecular gastronomy and fine dining, drawing inspiration from chefs like Martin Benn and Tetsuya Wakuda. In recent years he's found a new love for creating rustic, wholesome and flavourful dishes.

Ellery Hill-de Monchaux is a Fremantle native. He started his career in the hospitality industry at the young age of 13, working at Falduzzis in Freo. After finishing high school, Ellery spent seven years traveling between Fremantle and Holland, doing festival and hospitality work, gaining valuable experience working as a bar manager at Theater Festival De Parade and as site and build crew for Fringe Festival. He also worked as a waiter and bartender at Restaurant Vlaming and Tolhuistuin in Amsterdam. Ellery's passion for the hospitality industry lies in enjoying great food and learning the history of cocktail making. In his free time, he enjoys woodworking and furniture making, as well as raising guide dogs. Ellery has been an integral part of the Manuka management team for almost three years and will now lead the team at Shirley's Fremantle. With his years of experience and passion for exceptional beverages, Ellery is set to elevate Shirley's offerings and provide our guests with a fun & memorable dining experience.
